IBIZA SUNRISE.

Four in the afternoon on a terrace above the bay. The sun is still high, the floor is half full, and the DJ is keeping it slow and bright, the kind of record that sounds like the coast road with the windows down.

LASER is that hour in a glass: grassy sencha with blue cornflower, rose and sunflower petals, brewed light and poured over ice. Petals turning in the cold, a little floral, a little green. Low caffeine. The night is still a long way off.

Nine o'clock. Inside, the room goes dark, then white, then dark again. The first strobe of the night lands on the beat and four hundred faces look up at once.

STROBE is Earl Grey dressed for it: China black tea and bergamot, with rose, mallow and hibiscus that turn the cup ruby. Brew it double strength, pour it over ice and watch it go red under the lights. Contains caffeine. This is the one for lights on.
